Frozen Hot Chocolate

Growing up, my sister and I loved to eat this cold treat called frozen hot chocolate. It was the perfect snack for a summer movie night. It gave us the cozy feeling of snuggling up on the coach without adding to the summer heat. Well, my sister had been asking about it lately, and we found out the company no longer makes the product. So, I figured I would try my hand at making frozen chocolate. I have a recipe for homemade ice cream that I found here. With a little bit of tweaking, I was able to make ice cream with the hot chocolate flavor.

Although, this was my first attempt at making hot chocolate, it wouldn’t have been as successful if I hadn’t tried and failed making chocolate ice cream before. You see, when I made ice cream, I always made the base according to the instructions in the link above. That left me with the final moments before freezing the mixture to add in my flavors. As I learned, cocoa powder doesn’t do well if there’s no heat involved, so I had to scrap that batch, but it gave me an idea for making hot chocolate ice cream.

My sister’s nostalgia and my own cooking failures led me to create one of my new favorite flavors of ice cream, and the best part? You don’t need any special equipment to make this ice cream. I don’t even have an ice cream maker. I freeze the batch in cake pans and stir it myself to make sure it freezes easily. Read on for the original recipe inspired and adapted from Kurada on Food.com.

Frozen Hot Chocolate

Ingredients

  • 2 cups whole milk
  • 1/2 cup hot chocolate drink mix
  • 2 eggs, separated
  • 1/2 cup sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla
  • 1/8 teaspoon xanthan gum
  • sea salt to taste
  • desired amount of marshmallow creme

Steps

  1. Separate 2 eggs.
  2. Beat the egg whites until stiff.
  3. Mix sugar with the egg yolks until thick.
  4. Meanwhile, boil the milk and hot cocoa mix in a medium saucepan over medium heat, stirring occasionally.
  5. Pour hot milk and chocolate mix over egg yolk and sugar mix. Stir together.
  6. Pour new mixture back in saucepan and heat over medium heat. DO NOT LET IT BOIL. When the mixture takes on a custard like thickness, pour it over the egg whites and mix well.
  7. Add sea salt to taste, but be careful not to overdo it.
  8. Chill for one hour.
  9. Mix in whipping cream and vanilla.
  10. Split into two cake pans, so the liquid is shallow enough to freeze, and place in the freezer.
  11. Check every 15-20 minutes, and stir, pushing the liquid toward the edges, so it freezes. When you have just a small amount of liquid left, add in the desired marshmallow fluff, stir and freeze again.
  12. Repeat this process until ice cream is frozen throughout. Serve and enjoy!
